That underwater tunnel eventually comes out into another cave with an exit to the surface,, so there are at least two ways to get to it. It was a pretty long swim to get to the ore. Grab an egg, and stay around to where you grab aggro from as many wyverns as possible then lure them -across- the griffin trench going relatively north (not along the trench).
